Eboshi Ramen Bar was founded by Mike Kusakabe, a former Asahi Beer employee. Mike ran Eboshi for years as a ramen izakaya restaurant before retiring and selling to good family friends of his, the Morimoto family. Both Mike and the Morimotos are from Chigasaki, Kanagawa. In Chigasaki there is a famous beach which has an iconic island rock named "Eboshi." Most of the current chefs and staff have been working at the restaurant for over 15 years, Mike’s original recipes are said to be still protected to this day. Open since 1994. @eboshiramen Less

Rakkan Ramen was founded by master Ryohei Ito-san in Tokyo in 2011. After opening a few branches in Tokyo, Rakkan expanded overseas with the opening of Rakkan Ramen DTLA in 2017. The brand now has around ten stores in the U.S., most of them franchise-run in locations such as Orange County, Houston, Boulder, Georgia, Chicago and Las Vegas.
