Duck ramen has been an ongoing trend in recent years, with our web-footed friends making for some tasty bowls. It’s an expensive ingredient, but with the cost ceiling for ramen rising a few hundred yen, it isn’t out of the question. Yoshiki, out Chiba way, turns ducks into a rich bisque. It’s perfect for tsukemen.

The noodles are supplied by Kokoro no Aji Seimen and come floating in a pink dashi of kombu and sakura ebi (shrimp).
