Duck ramen has been an ongoing trend in recent years, with our web-footed friends making for some tasty bowls. It’s an expensive ingredient, but with the cost ceiling for ramen rising a few hundred yen, it isn’t out of the question. Yoshiki, out Chiba way, turns ducks into a rich bisque. Instead of your standard half-cooked egg, Marusan serves their ramen with a slice of Japanese-style omelet. Sweetened with a bit of mirin and sugar, this is a tasty treat usually reserved for the end of a sushi meal or a convenience store sandwich. Sweetened with a bit of mirin and sugar, this is a tasty treat usually reserved for the end of a sushi meal or a convenience store sandwich. Another topping, yamakikurage (山くらげ) is unique and special. This pickled Chinese vegetable is fresh and green. Crunchy stems that resemble kikurage, jellyfish.

Jyanmaru in Meguro.
The soup is a mix of nine ingredients, emphasizing pork bones. The shop is, after all, tonkotsumen (とんこつ麺) Jyanmaru. Go for ramen, tsukemen, or the fat-heavy gattsunnmen (がっつん麵). I went with the standard bowl. Rich and powerful, but a bit more subtle than Yokohama ie-kei style. By the way, they offer kakuni... More

Stewed pork belly should never be missed.

Like most Jiro-style shops, you should order the mini ramen if possible. Mini, in this sense, is only double the size of a normal bowl. Clocking in at 200 grams, this is anything but small. Don’t let the naming scheme fool you. If you want soupless, there is often a service charge. Pay an extra 100 yen to get it without... More

Don’t let the naming scheme fool you. If you want soupless, there is often a service charge. Pay an extra 100 yen to get it without soup. I’m not sure why they do this, but they often do. The top ticket, clocking in at 50 yen, is for some fresh ginger. Soupless styles usually have a few extra topping choices. Buy them all.

Late night restaurant Ye Hong Kong does large format dishes for the entire table. Duck, lobster, a plethora of fish, and moray eel all make an appearance. Only groups of 3-8 allowed after 9pm. Earlier it's a different concept.
