Medium-thick noodles are housemade with nori seaweed kneaded into them, inspired by the regional dish ‘hegi soba’ from Niigata (where master Tagano-san is from). Limited menu items rotate based on the day of the week. The pictured ‘spicy sesame tsukesoba’ is served with a dipping soup featuring tahini, dried shrimp, chili oil and various nuts. Sliced pork chashu, menma, negi, nori and togarashi on the side. All ingredients used are sourced domestically, including high quality salt. No msg or artificial additives.
Run by master Yoshiko Tagano and her husband. Open 11:30am-2:30pm or until the ingredients run out. 10 counter seats. Open since April 20th, 1996. Less
多賀野
Takano, a legendary ramen shop in Tokyo, has been serving classic bowls using quality Japanese ingredients for over 20 years. Located off Skip Road, the shop is known for its cool, old-school atmosphere. The tsukemen soup is made from pork and duck, and the whole grain noodles are made in house. The extensive menu, including the spicy sesame bowl, is a must-try for fans of this style.
Recommended bowl: Simple yet perfect
Located just across the street from Ebara-Nakanobu station, this amazing little ramen shop is run by a husband and wife team working in tandem. The noodles are handmade from whole wheat. The shop specialty is a delicate niboshi shoyu ramen. For each order served, the master pours the soup through a strainer full of dried niboshi directly into each bowl, further infusing the broth with the natural essence and umami of the fish.
