Sato was the final shop on the Tabelog Hyakumeiten (百名店), a curated best-of list for Tokyo’s ramen shops. The final stop on a journey that will be reset the following year, but a journey nonetheless. The location out near Haneda Airport is a bit far for me, hence the last shop on my list

Run by master Satō-san, this well regarded shop offers an extremely simple menu consisting of chūka-soba with different toppings and curry rice to go on the side. The chūka-soba's soup is a clear chicken base with katsuo and niboshi. Thin slices of fatty pork chashu, seasoned bamboo shoots, and a plump egg makes these bowls set.
