Chicken soup ramen is rare in the ramen scene, with most shops mixing pork and chicken bones. Yamaguchi's soy tare is unique, with a blend of soy sauces and umami-rich ingredients. Ramen Yamaguchi. An all time favorite. Chicken and shoyu based, with chicken and yuzu wontons. Also tried the mini rice bowl with pork, which was excellent. Worth the line up, which was about 35 minutes at 2pm on a Saturday.

One of the first shops to feature high-grade chicken as the only ingredient in the soup. Absolute legend of a shop. Get extra chicken chashu if you have an appetite.

Yamaguchi was opened in 2013 by Yamaguchi-san, a well respected veteran of the Tokyo ramen scene. The bowls of shoyu torisoba he whips up here are among the very best in Tokyo. The soup is a golden brown, layered with chicken fat, and is made using chickens from Yamaguchi-san's hometown of Aizu, Fukushima.
