Thanks #nameredacted for the chef's tour of Toyosu Fish Market.

With overseas travel canceled we walked into Sushi Dai without a wait. This place has a reputation as a "tourist" sushi shop but the fish was all tops today. Pictured is a hefty sack of fugu shirako.
