Tried a few sushi spots in Nanao, Ishikawa. It's an onsen town about a third of the way up the Noto Peninsula. Kozushi was tops. All local fish. Mega Affordable. It's recommended to book a month in advance but I managed to get a last minute reservation a few days prior.
