純手打ち だるま (Daruma in Nakano, Tokyo)

The ramen at Daruma is shoyu ramen, made on-site by hand, with noodles rolled and hand-pressed just before serving. The chashu is divine, with a limited chashumen offering triple slices of a normal bowl. Daruma is located in a cute neighborhood, and the ramen is a top-end bowl of Kitakata-style.

純手打ち だるま

The ramen at Daruma is called shoyu ramen, with noodles made on-site by hand. The chashu is delicious and resembles Shichisai, where the master trained before opening Daruma. The chashu is divine, so arrive early for limited portions. For dessert, get extra pork and an orange yolk egg. Daruma is located in a cute neighborhood and is near my home.

Recommended bowl: Shichisai disciple

Jun Teuchi Daruma was launched in March 2018 by a former apprentice of the famed ramen powerhouse Shichisai. As is the case at Shichisai, the focus here is on the teuchi handmade noodles. After each order comes in, the master cuts fresh noodles from a ball of dough right out on the counter, dusts them in flour, and pounds/kneads them briefly to give them the proper texture and then plunges them into the boiling water.
