ミックスワンタンメン / Mix Wontonmen / Shinasoba Tantantei — Hamadayama, Tokyo
The original Tokyo style wontonmen. Old school shoyu soup uses a variety of ingredients including pork, chicken, mackerel, niboshi, shiitake, kombu, dried shrimp and oxtail. The soup is made one day in advance and chilled to develop flavor before being used. Medium thin low-hydration noodles are provided by Daiei Shokuhin. Two types of handmade wontons feature pork and shrimp, also topped with tsurushi style hook-hung pork chashu, bamboo shoots and nori seaweed. Fried gyoza on the side.
Founded by master Satoshi Ishihara-san, Shinasoba Tantantei is considered the godfather of Tokyo wontonmen. Most of the popular shops serving wontonmen in Tokyo these days are run by masters who either trained at Tantatei or another shop in the lineage. Master Ishihara-san has since left to open ‘Shinasoba Ishihara’ in Ogikubo, but the recipes and cooking methods here have stayed unchanged. Open every day from 11am-8:30pm. Nine seats. Since 1977. 支那そば たんたん亭 (Tantantei in Hamadayama)
Tantantei, an old-school style ramen shop, is famous for its wontons, which are a key difference from chukasoba. The shop offers a mix bowl with pork and shrimp wontons, and wonton soup for a low carb diet. The wontons are legit. This shop's dynasty is insane.
I'm currently breaking down the Top 100 #hyakumeiten #百名店 shops from around Japan. This one is 81/100 on the Tokyo list.

Recommended bowl: Old school wontonmen
Tantantei has been serving ramen for over 35 years, and it is known for one thing: wontonmen. The shop is an institution, having trained numerous masters who went on to establish prestigious wonton-men shops around Tokyo. The masters of Yakumo, Hayashimaru, and Ishihara – all highly respected shops – got their start working here.

Just one shoyu-based variety of soup is served, but it's made with a vast array of ingredients, such as saba, shiitake, konbu, niboshi, dried shrimp, pork parts, chicken parts, ox tail, and others. Various dishes are available, including ramen, wonton soup, wontonmen, chashumen, etc. Two types of wontons are served, one with meat filling and the other with shrimp. Order the "mix wontonmen" so you get to try both. Tantantei's chashu is prepared Chinese style, so it has a bit of that dim sum sweetness. The handmade wontons are immaculately prepared. A classic Tokyo shop. Less
