Seabura backfat is used commonly in ramen. Thick globs of silky fat that basically melt in the bowl. Although the image looks chunky, it is smooth as butter. Probably more calories than butter as well.

Yes, that is the soup. A chicken porridge. I’ve never had anything like this before. The closest I can think of is the 100% pork soup at Muttepo, but that would be like comparing apples and oranges, or in this case pork and chicken.

The Japanese word kataguruma, or shoulder car, means piggyback. It’s a fitting name for a shop opened by the disciple of another famous shop. In this case, it’s Orenoramenappare (俺のラーメンあっぱれ屋), also in Kyoto. But the original is not convenient by modern standards. It will take about an hour on public transport to get there. Kataguruma is just a couple stops from Kyoto Station proper.

This is the 追い鰹醤油らーめん, a shoyu ramen rich with katsuo flavors. Super dark brown, with a flavor to match. If you aren’t a fan of rich, smoky fish flavors in your ramen, you’ve just wasted a couple hours of your life.
The shop’s signature kurumabu – 車麩 – is an easy way to know your bowl is from Nagomi. Those circular things on top are actually friend bread slices from Okinawa. Kind of like bits of toast, they soak up the soup the way slices of baguette do in French onion soup.

What a beautiful bowl. It wasn’t as creamy as I thought it would be. They hit the soup with a hand blender just before serving to froth it up a bit. Underneath the foam is a deep shoyu soup. Amazing stuff. Rare, peppered chashu lining the bowl is their signature.
