Rich miso soup contains a ratio of roughly 60% chicken bones and 40% pork bones, combined with chicken feet, potatoes, ginger, onions and negi. The miso features a mix of Shinshu miso and Sendai miso. Medium-width straight noodles are by Mikawaya Seimen. Topped with roasted pork chashu, ajitama, bean sprouts, minced meat, onions and garlic, all stir-fried in a work with lard. Options for spicy include house-made chili oil.
