辛味噌 / Kara Miso / Misokko Hook — Ogikubo, Tokyo
Rich miso soup contains a ratio of roughly 60% chicken bones and 40% pork bones, combined with chicken feet, potatoes, ginger, onions and negi. The miso features a mix of Shinshu miso and Sendai miso. Medium-width straight noodles are by Mikawaya Seimen. Topped with roasted pork chashu, ajitama, bean sprouts, minced meat, onions and garlic, all stir-fried in a work with lard. Options for spicy include house-made chili oil.
Master Fukushige-san (aka DJ Hook) trained at the miso ramenya Hanamichi for five years before opening his own shop. He went independent with the master of Hanamichi's approval, taking over the space previously occupied by Kaede (the 2nd branch of Hanamichi). Nine seats. Open since October 2018.
