人類みな麺類 東京本店 Jinruimenrui in Ebisu.

Jinruimenrui means “noodles for all humanity.” They come from the oddly-named UNCHI group (unchi means poop in Japanese) out of Osaka. With a few popular shops bringing massive lines in Osaka, it makes sense that they venture out east to Japan’s capital city.

Recommended bowl: Famous Osaka shop

Jinrui Mina Menrui first opened in Osaka in 2012. Run by the Unchi (poop) Company, headed by president Matsumura-san. They operate a handful of interestingly named ramen shops in Osaka, and this is their first Tokyo outpost. The recommended 'Ramen Macro' contains a light shoyu soup of mostly chicken and shijimi clam dashi.
