Recommended bowl: Famous Osaka shop
Jinrui Mina Menrui first opened in Osaka in 2012. Run by the Unchi (poop) Company, headed by president Matsumura-san. They operate a handful of interestingly named ramen shops in Osaka, and this is their first Tokyo outpost. The recommended 'Ramen Macro' contains a light shoyu soup of mostly chicken and shijimi clam dashi. There is also a 'Ramen Micro' which is served with a stronger shoyu tare, as well as a 'Ramen Genten,' made with katsuo based shoyu soup. The noodles are house-made and pounded by foot. The thick-cut pork chashu is cooked in a pressure cooker for three hours, becoming soft and tender. Open in Ebisu since July 2020.
