Ramen Shima, a new ramen shop in Nishi-Shinjuku, Tokyo, offers refined shoyu, shio, and tsukemen made with premium ingredients and technique. Located near the Tokyo Metropolitan building, the line has increased significantly since June 2020, and now has a signup system. The katsuo konbusui tsukemen is a standout dish, served in a broth made from skipjack tuna and konbu seaweed. Recommended bowl: High pedigree

Open since June 10th, 2020. The master trained at the famous Shinasobaya in Yokohama, then worked at multiple top level shops including Sugimoto, Kashiwagi, Kokō and Ramen Free Birds. Soup is chicken and pork based chintan with shoyu tare (shio also available). Noodles are ordered directly from Shinasobaya. Ramen and tsukemen are both on the menu, both recommended.
