らーめん 鉢ノ葦葉 本店 (Hachinoashiha in Yokkaichi, Mie)
The shop boasts their use of all Japanese ingredients and a non chemical mantra. Very chicken-y, with some nice fried onion as an accent.
They offer a few other items on the menu, but first-timers should get the shio ramen, without a doubt.
I'm currently breaking down the Top 100 #hyakumeiten #百名店 shops from around Japan. This one is 10/100 on the West Japan list.

He is self taught, never trained at another shop and never really ate at many ramen shops. The meaning of the name 'Hachinoashiha' is kept a secret, but for master Hori-san it has some kind of special, magical meaning. Considered by many to be the best ramen in Mie Prefecture. Open since 2007. Less
