Recommended bowl: Light tonkotsu

Master Takahashi-san trained at the ramen shop Kōya in Yotsuya for seven years before opening his own shop, located not too far away just across the street from Iidabashi station.The bowls here are somewhat similar to those at Kōya, and come with a light tonkotsu soup made from pork bones, chicken bones and onions.The noodles are supplied by Yoshida Shokuhin and made in Shinjuku. Takahashi-san divvies them out using a hirazaru (flat strainer), right in front of patiently waiting customers. The recommended wontonmen comes topped with pork wontons. Open since 1991.
