Recommended bowl: Unique and modern
The master here first ate at the popular Takasaki shop, Nakajima, and thought it was delicious. He then decided to apprentice at the ramen shop, Kazuya in Meguro, Tokyo, which is the same shop where Nakajima-san apprenticed. Rather than follow the same style menu though, he decided to go original when it was time for him to open his own shop. Noodles are made on a Shinagawa Menki brand noodle machine. Each week the noodles alternate between flat noodles and thin noodles. Choice of shiro shoyu (recommended) or shoyu tare. Open since 2016.
