Recommended bowl: Garlic oil, egg yolks

One of the more famous shops in central Kumamoto, served with signature blackened garlic oil on top. The rich tonkotsu soup is made using pig heads, and is paired with homemade noodles that contain no eggs. The recommended 'tamagoiri ramen' comes topped with two egg yolks that you break and dip your noodles into before slurping. Opened by master Hirabayashi-san in 1957, now run by the second generation.
