Recommended bowl: Extra rich tonkotsu
One of the more famous ramen shops in Kumamoto, this shop has a huge dragon outside above the entrance. Serving up a super rich tonkotsu soup, made from pork bones and extra pork back fat. It is said that 300 kg of pork bones are used to make the soup every day. The soup is made yobimodoshi style, which means each day's leftover soup goes into the stockpot for the following day. Medium thick noodles are made in-house. Spicy miso paste is served in each renge (soup spoon). Run by master Kudo-san, who trained at the shop Fūraiken in Miyazaki prefecture. Bunryū has two shops now, both in Kumamoto. Open since 1998.
