Recommended bowl: Chicken & gyokai
This is the second branch and shop from master Ono-san, who trained at Menya Musashi in Tokyo, and runs the Kanazawa shop, Uguisu. The menu here is similar to Uguisu but also unique, as the specialty here is a shio ramen. The soup is chicken and gyokai based, with noodles supplied by Kanezin. Topped with low-temperature-cooked chashu and yuzu, options for shoyu ramen also available. Open since 2017.
