Recommended bowl: Aomori style
Opened in 2009, the original menu consisted of tonkotsu ramen, standard in the region of Kyushu. However the master had previously lived in Aomori, and was inspired by the ramen there, so in 2016, he decided to completely rebrand and started serving bowls of authentic Aomori style niboshi shoyu. The soup is made from 100% dried fish, water and nothing else. The exact recipe of varied dried fish changes every day, depending on what is available at market. Noodles supplied by Yamaguchiya Seimen. Since the rebranding, it is one of the higher ranked ramen shops overall in Kumamoto.
