Recommended bowl: Yamagata style

This Yamagata themed shop sources many of its ingredients from Yamagata prefecture, including the shoyu, miso, bamboo shoots and rice. The popular 'Rekka Ramen' comes with a soup that is beef bone based, combined with four types of gyokai and a miso tare. The spice level can be chosen from 1-10. Noodles are supplied by Teigaku, based in Kyoto. Shoyu ramen and mazesoba also recommended. Current Shōnai flagship location open since 2013, with two other branches in Osaka.
