Recommended bowl: Tsubame-Sanjō style
Open since 1972, this is an old school shop serving up a standard Tsubame-Sanjo style bowl, with a niboshi shoyu soup topped with pork back fat and diced onions. It was inspired by Koushu Hanten, the ultra-old school originator of this particular style. Thick noodles, and an extra layer of oil on the surface of the soup. Free negi on the counter to add yourself.
