Recommended bowl: Triple soup

Kentaro serves a triple soup which is made from pork, chicken and gyokai based broths, each made separately before being blended together. The gyokai soup alone contains five varieties of fish-- niboshi, katsuobushi, maguro, saba and iwashi. The noodles are special ordered from Daiei Shokuhin using a 20-year old recipe supplied by master Kentaro-san, and topped with optional pork back fat before being served. Originally opened in Shinjuku where the shop operated for 10 years, before eventually moving to Koenji. Now open over 25 years total. Last order at 1:15am.
