Kentaro serves a triple soup which is made from pork, chicken and gyokai based broths, each made separately before being blended together. The gyokai soup alone contains five varieties of fish-- niboshi, katsuobushi, maguro, saba and iwashi. The noodles are special ordered from Daiei Shokuhin using a 20-year old recipe supplied by master Kentaro-san, and topped with optional pork back fat before being served.
