Recommended bowl: Nagano seabura style

The master of Suzume Shokudou hails from Nagano prefecture and serves ramen in the style of his hometown – mild but satisfying niboshi shoyu chuka soba. The shop opened its first Tokyo branch in 2013 and has gained a following. The noodles have a smooth texture and a good bounce. Each bowl comes with a slice of buta chashu and tori chashu. The buta chashu is seared lightly with a blast of the blowtorch. The egg has an orange, gooey center – marvelous. The small piece of fresh yuzu rind placed in the bowl is also a nice touch. If you're especially hungry, order the outstanding buta meshi (pork rice bowl) as a side – soft cubes of fatty pork that melt and ooze in your mouth. Suzume is one of the top shops in the vicinity of Tokyo Sky Tree, the world's fourth tallest manmade structure. An attractive option for visitors.
