Recommended bowl: Famous dragon

Famous late night street side shop, serving light tonkotsu soup with options for free toppings like garlic and kimchi. Noodles are made in the company’s central kitchen. The company has five shops in Osaka, each one open 24/7/365. Opened in central Osaka in 1980, as an udon shop, closed once and reopened as a ramen shop in 1982. First they specialized in miso ramen but eventually changed to tonkotsu, as the noodle boiling time is shorter resulting in faster turnover. Run by company president Hayashi-san, who apparently opened the shops in areas where he liked to go out drinking. The kanji characters in the name mean ‘golden dragon,’ with each location having a different dragon decoration out front.
