Recommended bowl: Touhichi's 2nd

Opened in April 2018, Suguru is a spinoff brand from the famed Kyoto shop Touhichi. As Touhichi's theme is chicken, Suguru switches it up with a focus on pork. The standard bowls come with an option of shoyu or shio tare. The shio, which is the house recommendation, contains rock salt, sea salt and kombu. There is also a miso ramen on the menu, which is limited to 15 bowls per service. The miso ramen has a double-pork soup (one clear and one rich), blended with a miso tare containing five varieties of miso, one of them aged. All of the pork that goes into the soup and the toppings is local Kyoto brand Taba Kougen pork. The noodles are made on-site using organic flour. A top-level shop.
