Opened in April 2018, Suguru is a spinoff brand from the famed Kyoto shop Touhichi. As Touhichi's theme is chicken, Suguru switches it up with a focus on pork. The standard bowls come with an option of shoyu or shio tare. The shio, which is the house recommendation, contains rock salt, sea salt and kombu.
