Recommended bowl: Tokyo backfat style
Known for ‘Tokyo style back fat ramen,’ this shop offers up bowls of tonkotsu shoyu soup covered in a shower of pork back fat.The shoyu tare sauce added to each bowl is ‘cha-dare,’ made from the leftover shoyu used when marinating and cooking the pork chashu. Noodles are supplied via Tsuruya Seimen. Pork back fat can be seen added to each bowl both before and after the soup is added. Original flagship in Gotanda open since 2003, with a Second branch in Nishi-Ōjima open since 2007.
