Known for ‘Tokyo style back fat ramen,’ this shop offers up bowls of tonkotsu shoyu soup covered in a shower of pork back fat.The shoyu tare sauce added to each bowl is ‘cha-dare,’ made from the leftover shoyu used when marinating and cooking the pork chashu.
