Recommended bowl: Sliced chashu galore
When this shop opened in 2016, it was the eighth shop in the rapidly expanding Mutahiro empire ramen empire — and the group now has more than a dozen shops, including some outposts overseas. The inspiration for this branch is Aomori-style niboshi ramen, using multiple varieties of niboshi sourced from all over Japan, but particularly the Tottori, Nagasaki and Kagawa prefectures, respectively. The Japanese word for meat ('niku') appears in the shop name, so, of course, the pork chashu here is something special — marinated in a special tare sauce and then grilled. The noodles are supplied by Nagi Seimen, using a special variety of udon wheat.
