The unique point to this shop is its 'burnt' niboshi soup, which is made with chicken and contains four types of niboshi. The leftover dried fish from making the soup is normally thrown away in ramen shops, but here the master pan fries them before adding soup, then strains the umami rich broth into each bowl to order.
