Rinsan is beloved amongst locals because the recipe has not changed since the shop opened in 1948. Run by a husband and wife team, the recommended bowl is the Hakodate-style shio ramen. The soup is a clear broth of pork, chicken bones and kombu sourced from southern Hokkaido. Thin, straight noodles and handmade fried gyoza on the side. Authentic Hakodate.
