Recommended bowl: Carefully chosen
Paimen proudly displays the fact that the noodles here were chosen from 58 different types of noodles, and the soup used was chosen out of 33 types of soup. In it goes pork bones and chicken carcasses, eventually combined in each bowl with a shoyu tare. Customers can choose between medium thick noodles or thin noodles, both of which are supplied by Maruyama Seimen. Master Miyata-san previously ran the ramen group Makotoya (with three shops), then worked at Paimen as part of the staff before taking over the business. Original Setagaya branch open since 1995, Nakameguro since 2007.
