Recommended bowl: Niboshi variety

A gyokai specialty shop where the soup is made from different kinds of dried fish, the exact recipe changing all the time. It can anything from niboshi, squid, sanma, saba, or a variety of other fish products. No pork, chicken, or meat used in the soup. The soup is rich, thick, and extremely fishy. Thin, straight noodles with aedama noodle refills available. Now with three locations in Yokohama. At night the shop turns into a sake bar, and may or may not have ramen available.
