Recommended bowl: Niigata style w/ ginger

One of the most legendary ramen shops in Niigata and the OG purveyor of Niigata-style shoyu ramen w/ ginger. Clear pork-based soup made with konbu and ginger, to go along with a dark shoyu tare. House made noodles and super thin slices of pork chashu. Now with several branches in Niigata and one in Tokyo.
