This blue-collar shop has been a staple of the Sugamo area for years, offering Tokyo style bowls until 2am most nights. The shoyu tonkotsu soup comes laden in pork back fat, and the soup takes 20 hours to make. When each bowl is made, first the shoyu tare is added, then a good amount of pork fat, followed by the soup.
