Recommended bowl: Pride of Sengoku

This blue-collar shop has been a staple of the Sugamo area for years, offering Tokyo style bowls until 2am most nights. The shoyu tonkotsu soup comes laden in pork back fat, and the soup takes 20 hours to make. When each bowl is made, first the shoyu tare is added, then a good amount of pork fat, followed by the soup. Noodles are special ordered. There are four shops total in this group, all in central Tokyo. The original Sugamo flagship has been open since 1988.
