Recommended bowl: Oldest in Okayama
The oldest ramen shop in Okayama Prefecture still operating, open since 1948. Original Okayama style soup contains pork bones, pork skin, vegetables, kombu, apples, onions, garlic and urume iwashi. The tare sauce is made from 'cha-dare' (leftover tare sauce from making pork chashu), mirin and lard. Noodles are house-made. The popular 'Katsu Soba' is topped with a fried tonkatsu cutlet. Family owned and run by master Yanagihara-san, now third generation at the helm.
