Garnet + Amber + Quartz / Rakkan Ramen - Redondo Beach, California
Garnet miso ramen contains 100% vegetable soup using carrots, kombu, whole onions, garlic and ginger. The tare is a blend of miso and sesame paste. Rakkan original vegetable noodles are made with kale, each bowl also contains olive oil. Toppings include grilled pork, green onion, bamboo shoots and seasoned egg. Amber ramen contains a soy sauce broth using dried bonito and sardines, while Quartz ramen features a soup with a special creamy sauce.
Rakkan Ramen was founded by master Ryohei Ito-san in Tokyo in 2011. After opening a few branches in Tokyo, Rakkan expanded overseas with the opening of Rakkan Ramen DTLA in 2017. The brand now has around ten stores in the U.S., most of them franchise-run in locations such as Orange County, Houston, Boulder, Georgia, Chicago and Las Vegas. Rakkan Ramen Redondo Beach is the company's 2nd branch in the U.S., open since 2018. @rakkan_ramen
