Recommended bowl: Direct from Nagano

Open since 2004, this is the original Tokyo shop in the Bond of Hearts ramen group, run by master Tsukada-san of Nagano prefecture. The soup is a triple soup made from pork and chicken bones, gyokai and kombu dashi. Shiro shoyu is added into the tare, noodles are supplied by Arigatou Seimen and shipped in from Nagano. Tsukada-san runs five shops in Nagano, five in Tokyo and one in Kanazawa. Most of the ingredients he uses are from Nagano.
