Recommended bowl: Made w/ flying fish

A fairly famous shop, located in rural Joetsu, Niigata Prefecture. Opened in 2002, this shop does a variety of ramen dishes at a high level. Shio, Shoyu, Tori paitan, Tonkotsu, among others. Many of the soups used contain yaki-ago dashi, made from flying fish that are dried then grilled. Housemade noodles. For first-timers, the shio is the recommended bowl, but everything on the menu is satisfying. The shop has 31 seats, and parking spaces for 23 cars, given the remote location.
