The full name of this shop is 'Edomae Niboshi Chūka Soba Kimihan.’ The light yet flavorful soup is made with a number of ingredients and intends to have a nostalgic taste. Into the soup go chickens, katakuchi iwashi, sanma niboshi, kombu, shiitake mushrooms and hongare katsuobushi. Customers have the choice of shoyu or shio tare, paired with yuzu and noodles supplied by Maruyama Seimen. Seasonal specials also available. Run by the Tsukemen Tetsu group, with a few shops in Tokyo. The Uguisudani flagship opened in 2010, with the Gotanda branch from 2011. Located directly under the train tracks conveniently right next to Gotanda station.
