The full name of this shop is 'Edomae Niboshi Chūka Soba Kimihan.’ The light yet flavorful soup is made with a number of ingredients and intends to have a nostalgic taste. Into the soup go chickens, katakuchi iwashi, sanma niboshi, kombu, shiitake mushrooms and hongare katsuobushi.
