Recommended bowl: Rich tonkotsu gyokai

This shop is known for its heavy tonkotsu gyokai tsukemen, with a pork and slightly fishy soup paired with thick house-made noodles. Master Kinoshita-san makes his handmade, whole wheat rectangular cut noodles in a room in the back of the shop. His soup is a rich tonkotsu gyokai, made with sababushi, sanmabushi, katsuobushi and urume (all different types of dried fish). It is served with diced onions, radish, and spicy minced meat. There is also a shoyu ramen on the menu with a clear broth. On the first Saturday night of every month the shop turns into a standing-only drinking bar, and master Kinoshita-san sometimes offers new creative menu items to those who are lucky.
