Recommended bowl: Premium chicken taste
This highly ranked shop serves clear chintan soup made almost entirely of chicken parts. Whole chickens, chicken carcasses, minced chicken breast and chicken wings all go into the soup. No MSG. The shoyu is highly recommended, however shio is available, as well as a version made with niboshi, and tsukemen. The shoyu tare contains Yonibishi brand shoyu from Ibaraki prefecture, a purveyor in operation over 200 years. Hand pounded, wavy 'temomi chijiremen' style noodles are house-made. Toppings include pork belly chashu and shoulder chashu. Run by master Sakurai-san, who trained at the shop Kurenai in Fuchū under the famous chef Yamaguchi-san of Ramen Yamaguchi in Nishi-Waseda. Open since 2017.
