Recommended bowl: Hokkaido & Osaka style
Master Ishigaki-san is from Hokkaido and worked at ramen shops there for ten years. He then worked for three and a half years at the famous Osaka shop Kadoya Shokudou, before finally opening his own shop. The soup contains whole chickens from Kagoshima prefecture, chickens from Shiga prefecture, dried kombu, dried aji and dried saba (fish). Shio, shoyu and miso ramen are available, and all are recommended. The miso ramen contains sansho and ginger, and a blend of five types of miso, including Shinshu miso from Nagano. House-made noodles are made with wheat from Hokkaido. Topped with fresh yuzu. Only open for lunch or until the soup runs out. Open since 2015.
